Tom Yum GOONG is a popular Thai soup that features a spicy, sour, and aromatic broth with shrimp. Here are two different Tom Yum GOONG recipes that you can try:
Ingredients:
- 2 cups of chicken broth
- 1 stalk of lemongrass, bruised
- 3 kaffir lime leaves
- 1-2 Thai chilies, sliced
- 2 garlic cloves, chopped
- 1-inch piece of galangal, sliced
- 1 tablespoon of fish sauce
- 2 tablespoons of lime juice
- 1 cup of shrimp, peeled and deveined
- 1/4 cup of cilantro leaves
- 1/4 cup of sliced mushrooms
Instructions:
- In a medium pot, heat the chicken broth until it boils.
- Add lemongrass, kaffir lime leaves, Thai chilies, garlic, and galangal.
- Let the mixture simmer for 5 minutes.
- Add fish sauce, lime juice, shrimp, and mushrooms.
- Cook until the shrimp is pink and cooked through, about 2-3 minutes.
- Serve hot with cilantro leaves on top.
Recipe 2: Vegetarian Tom Yum Goong
Ingredients:
- 2 cups of vegetable broth
- 1 stalk of lemongrass, bruised
- 3 kaffir lime leaves
- 1-2 Thai chilies, sliced
- 2 garlic cloves, chopped
- 1-inch piece of galangal, sliced
- 1 tablespoon of soy sauce
- 2 tablespoons of lime juice
Instructions:
- In a medium pot, heat the vegetable broth until it boils.
- Add lemongrass, kaffir lime leaves, Thai chilies, garlic, and galangal.
- Let the mixture simmer for 5 minutes.
- Add soy sauce, lime juice, carrots, mushrooms, red bell peppers, onions, and tofu.
