SZECHUAN GRAVY FISH / PRAWNS is a popular Chinese dish that features a spicy and flavorful gravy made with Szechuan peppers and other aromatic spices. Here’s a recipe to make it at home:

Ingredients:

SZECHUAN GRAVY FISH

  • 500g fish fillets or prawns, cleaned and deveined
  • 1 tbsp cornflour
  • 1 tbsp soy sauce
  • Salt to taste
  • 2 tbsp oil
  • 1 tbsp garlic, minced
  • 1 tbsp ginger, minced
  • 2-3 dried red chilies, chopped
  • 2 tbsp cornflour mixed in 1/2 cup water
  • Spring onion greens for garnish

Instructions:

SZECHUAN GRAVY  PRAWNS

  1. Marinate the fish or prawns with cornflour, soy sauce, and salt for 30 minutes.
  2. Heat oil in a pan and fry the fish or prawns until golden brown. Remove and keep aside.
  3. In the same pan, add garlic, ginger, dried red chilies, and Szechuan peppercorns. Saute for a minute until fragrant.
  4. Add sliced onion and capsicum and fry for a couple of minutes until slightly soft.
  5. Add tomato ketchup, vinegar, dark soy sauce, sugar, and water. Mix well and let it come to a boil.
  6. Reduce heat and add the cornflour mixture while stirring continuously to avoid lumps.
  7. Once the gravy thickens, add the fried fish or prawns and mix well.
  8. Garnish with spring onion greens and serve hot with steamed rice.
