SZECHUAN GRAVY FISH / PRAWNS is a popular Chinese dish that features a spicy and flavorful gravy made with Szechuan peppers and other aromatic spices. Here’s a recipe to make it at home:
SZECHUAN GRAVY FISH
- 500g fish fillets or prawns, cleaned and deveined
- 1 tbsp cornflour
- 1 tbsp soy sauce
- Salt to taste
- 2 tbsp oil
- 1 tbsp garlic, minced
- 1 tbsp ginger, minced
- 2-3 dried red chilies, chopped
- 2 tbsp cornflour mixed in 1/2 cup water
- Spring onion greens for garnish
SZECHUAN GRAVY PRAWNS
- Marinate the fish or prawns with cornflour, soy sauce, and salt for 30 minutes.
- Heat oil in a pan and fry the fish or prawns until golden brown. Remove and keep aside.
- In the same pan, add garlic, ginger, dried red chilies, and Szechuan peppercorns. Saute for a minute until fragrant.
- Add sliced onion and capsicum and fry for a couple of minutes until slightly soft.
- Add tomato ketchup, vinegar, dark soy sauce, sugar, and water. Mix well and let it come to a boil.
- Reduce heat and add the cornflour mixture while stirring continuously to avoid lumps.
- Once the gravy thickens, add the fried fish or prawns and mix well.
- Garnish with spring onion greens and serve hot with steamed rice.
