PAD THAI WITH PRAWN is a popular Thai dish made with stir-fried rice noodles, vegetables, and a sweet and savory sauce. It’s often made with protein like chicken, beef, or tofu, but prawns (also known as shrimp) are a popular option as well. Here’s a simple recipe you can try:
Ingredients:
- 8 oz rice noodles
- 1 lb large prawns, peeled and deveined
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 2 eggs, lightly beaten
- 2 cups bean sprouts
- 1/4 cup peanuts, chopped
- 2 green onions, sliced
- 1 lime, cut into wedges
For the sauce:
- 4 tbsp tamarind paste
- 3 tbsp fish sauce
- 2 tbsp brown sugar
- 2 tbsp soy sauce
- 2 tbsp chili sauce
Instructions:
- Cook the rice noodles according to the package instructions until tender. Drain and set aside.
- In a bowl, whisk together the tamarind paste, fish sauce, brown sugar, soy sauce, and chili sauce to make the sauce. Set aside.
- In a large wok or frying pan over high heat, heat the oil until hot. Add the garlic and stir-fry for 30 seconds.
- Add the prawns and stir-fry until they turn pink, about 2-3 minutes.
- Push the prawns to one side of the wok and add the beaten eggs to the other side. Scramble the eggs until cooked, then mix with the prawns.
- Add the cooked noodles to the wok, then pour the sauce over the noodles and toss to combine.
- Add the bean sprouts and continue to stir-fry until they are just wilted, about 1-2 minutes.
- Transfer the pad Thai to a serving platter and sprinkle with chopped peanuts and sliced green onions. Serve with lime wedges on the side.
