PAD THAI WITH PRAWN is a popular Thai dish made with stir-fried rice noodles, vegetables, and a sweet and savory sauce. It’s often made with protein like chicken, beef, or tofu, but prawns (also known as shrimp) are a popular option as well. Here’s a simple recipe you can try:

Ingredients:

  • 8 oz rice noodles
  • 1 lb large prawns, peeled and deveined
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 2 eggs, lightly beaten
  • 2 cups bean sprouts
  • 1/4 cup peanuts, chopped
  • 2 green onions, sliced
  • 1 lime, cut into wedges

For the sauce:

  • 4 tbsp tamarind paste
  • 3 tbsp fish sauce
  • 2 tbsp brown sugar
  • 2 tbsp soy sauce
  • 2 tbsp chili sauce

Instructions:

  1. Cook the rice noodles according to the package instructions until tender. Drain and set aside.
  2. In a bowl, whisk together the tamarind paste, fish sauce, brown sugar, soy sauce, and chili sauce to make the sauce. Set aside.
  3. In a large wok or frying pan over high heat, heat the oil until hot. Add the garlic and stir-fry for 30 seconds.
  4. Add the prawns and stir-fry until they turn pink, about 2-3 minutes.
  5. Push the prawns to one side of the wok and add the beaten eggs to the other side. Scramble the eggs until cooked, then mix with the prawns.
  6. Add the cooked noodles to the wok, then pour the sauce over the noodles and toss to combine.
  7. Add the bean sprouts and continue to stir-fry until they are just wilted, about 1-2 minutes.
  8. Transfer the pad Thai to a serving platter and sprinkle with chopped peanuts and sliced green onions. Serve with lime wedges on the side.
