- 500g fish fillets or prawns
- 1/2 cup unsalted peanuts
- 4-6 dried red chili peppers
- 2 cloves garlic, minced
- 1/4 cup water
- Salt and pepper to taste

- Rinse the fish fillets or prawns under cold water and pat them dry with paper towels. Cut the fish into bite-size pieces.
- In a bowl, mix together cornstarch, soy sauce, Chinese cooking wine or dry sherry, and sesame oil. Add the fish fillets or prawns and stir to coat them evenly. Let them marinate for 15-20 minutes.
- Return the peanuts to the wok or skillet and stir-fry for 30 seconds to combine. Serve hot with rice. Enjoy
